Sometimes you want to be brave in your kitchen and try new ingredients, new recipes, and some other times, you just need something simple and comforting. This recipe is my grandmother’s, and after feeling a little bit down the whole week, I thought that might help to cheer me up a little, reminding me of the good memories at my grandmother’s.
Ingredients for 4 jars:
- 800 g of apricots
- 1 tablespoon of lemon juice
- 600 g of sugar
- 1 vanilla pod or vanilla sugar (optional)
Times:
- Preparation: 10 mins
- Cooking: 45 mins
- Rest: none
1- Wash the fruits, cut them in to and remove the core.
2- Boil some water in a deep pan, and put your jars and the lids in the water for 3 minutes. Then get rid of the water and let the jars dry on a kitchen towel.
3- Put the fruits in a hot pan over low heat with the lemon juice and the sugar (if you wish to flavour your jam and add some vanilla, this is now the time to add it to the pan).
4- Let cook for 45 minutes first over low heat so the sugar becomes liquid, and then increase the heat for the remaining time to medium/high level. Stir regularly (every few minutes), during the whole process though.
5- To check if the jam is cooked enough, put a few drops on a inclined plate, they should set almost instantly and not fall of. When it reaches that point, spread the jam into the jar, close them carefully, and put them up side down until the jam cooled down.
