Those cookies are a little bit unusual, but the mix between the pine nuts, the orange flavour, and the chocolate is an amazing combination. I was inspired by a recipe I found on a French cooking blog (www.leconfitcestpasgras.com) but I customised the recipe, as I didn’t have all the ingredients at home.
Ingredients for 16 cookies:
- 160 g of flour
- 80 g de soft butter
- 40 g of sugar
- 40 g of pine nuts
- 2 egg yolks
- 60 g of dark chocolate chips
- 1 tablespoon of cocoa powder (optional)
- 40 g of candied orange peels
- The zest of 1 orange
- 1 to 2 tablespoons of fresh orange juice
- Half a pack of baking powder
Times:
- Preparation: 25 mins
- Cooking: 13 mins
- Rest: 1h
1- Mix the baking powder to the flour. Add the soft butter and mix well. Then add the sugar, the cocoa powder and mix again.
2- Chop the candied orange peels, and add them to the batter with the chocolate chips, the pine nuts and the orange zest. Mix well.
3- Incorporate the egg yolks. If the batter is too dry and crumble, you can add 1 or 2 spoons of orange juice.
4- Shape into a ball, wrap in a cling film and keep in the fridge for an hour.
5- After an hour preheat the oven at 180 Celsius degrees, and roll out the dough until 1 cm thick roughly. Cut the cookies with a cookie cutter and place them on a oven tray covered with baking paper. Put in the oven for 13 to 15 minutes (keep an eye on the cookies to make sure they don’t burn).
6- When they are baked, place them gently on a wire rack to let them cool down completely.
