I don’t understand people who don’t like spinach because me? I LOVE them, and that for as long as I can remember! Why not trying them with something a bit different… a few clicks to help stimulate my inspiration and here are my small spinach, shrimps and blue cheese flans
Ingredients for 2 portions:
- 2 eggs
- 150 g of shrimps
- 150 g of frozen spinach (but you can of course use fresh spinach)
- 1 teaspoon of crème fraiche (you can use a low fat one)
- Chopped chives
- 60 g of blue cheese
- 1 shallot or 1 small onion
- Salt, pepper
Time:
- Preparation: 20 mins
- Cooking: 30 mins
- Rest: none
1- Chop the shallot and cook them for a few minutes with the shrimps into a hot pan with 5 gr of butter.
2- Put the frozen spinach in another hot pan until the water evaporates (if you are using fresh spinach, put them into the pan with 40 ml of water.
3- Mix vigorously the eggs with the crème fraiche, the chives, salt and pepper in a large bowl. Add to them the shrimps/shallots mix and then the spinach.
4- Pre heat the oven at 190 Celsius degrees. Pour the mixture into 2 individual ramekins and spread the blue cheese randomly on the top. Place them into a bain-marie and cook them in the oven for 30 minutes. After 30 minutes, take them out of the oven and let them cool down a little bit. Then unmould gently the flans and enjoy them a little bit warm with toasted bread.
