I had this recipe since I was a teenager. It came from a Mickey Mouse magazine, which I used to love reading! I completely forgot about it until one day at my parents, where I found my old dusty mag! I can’t believe I didn’t throw it away and still have it! It’s a sign! Next thing you know, I am baking those little gems in my mum’s kitchen!

Ingredients for 28 chouquettes:

  • 250 ml of water
  • 40 g of sugar
  • 125 g of flour
  • 4 eggs
  • 1 egg yolk (optional)
  • 60 g of butter
  • ½ teaspoon of salt
  • Roughly 80 g of rocky sugar (to decorate)

Times:

  • Preparation: 20 mins
  • Cooking: 25 mins
  • Rest: none

1- Preheat the oven at 180 Celsius degrees.

2- Boil the water in a pan with the butter, the sugar and the salt.

3- When it starts to boil remove from heat and add all the flour and start stirring vigorously with a wooden spoon to avoid the lumps in the dough, until you have a ball of dough that doesn’t stick to the surface of the pan. Put back over the heat for a quick 30 seconds to dry the dough a little bit more, and let cool down for 2 minutes.

4- Once the dough has cooled down a little bit, add the eggs one by one, and stir well between each to incorporate them evenly.

5- Using a tablespoon, scoop the dough and put the choux buns in staggered lines on a baking sheet, slightly greased. Glaze the surface of the choux buns with the beaten egg yolk (either with a brush or your finger). Finish by sprinkling some pearled sugar on the top.

6- Put in the oven for 25 minutes. At the end, turn off the oven and open the door for a couple of minutes before taking out the choux, so they can cool down slowly.

    Bonsoir, je fais un petit tour bien sympa sur ce blog et je tombe sur cette fameuse recette récupérée sur un magazine il y a plus de 17 ans alors quelle surprise c’est la même recette que faisait deja ma grand-mère et que je fais toujours .
    Recette d’un livre des années 40-50 et qui fait toujours son effet.
    recette appréciée des anglais? Anglaise ou vivant en angleterre ?

      Et oui les chouquettes sont un classique inter-génération que même Mickey a adopté 🙂
      Recette très appréciée des anglais, cuisinée avec un peu de chauvinisme je dois avouer, par une française vivant à Londres. Le coeur a ses raisons… j’y ai suivi mon chéri il y a quelques années 😛
