I have some avocados left over from last weekend, and they are starting to look tired, very tired, too tired to be used in a salad. And like my beloved grandmother, I hate food waste, so no way to throw them. I need a new recipe, here it is:
Ingredients for 4 portions:
- 2 avocados
- 1 large cucumber
- 1 lemon juice
- 125 g of yogurt
- Salt, pepper
- A pinch of chilli
- Some fresh mint leaves and/or basil leaves
Times:
- Preparation: 10 mins
- Cooking: none
- Rest: 2 h
1- Cut the avocado in two and remove the flesh with a spoon (try not to damage the skin and don’t throw them away as we will need it later on for presentation) and cut it into pieces.
2- Peel the cucumber alternating the strips and cut it also into small pieces.
3- Keep a couple of mint leaves aside for presentation, and put the rest of them with the avocado, the cucumber, the yogurt, the lemon juice, salt pepper and chilli into a blender and mix them together.
4- Keep refrigerated at least 2 or 3 hours before serving, as this soup is better when very cold. I like to use the avocado skin to serve this soup, with a couple of mint leave on the top.
