A couple of days ago while I was shopping, I found those 3 cookie jars and it was love at first sight! My last attempt to bake cookies was years ago, and ended up in a complete catastrophe. But I needed an excuse to buy those boxes, they were so pretty! Excuse that I found on Internet, but as usual I changed some things here and there in the recipe (particularly reducing the sugar) to adapt it to my taste.

Ingredients for 30 cookies:

  • 300 g of flour
  • 140 g of soft butter
  • 80 g of sugar
  • 80 g de brown sugar
  • 2 eggs
  • ½ teaspoon of salt
  • ½ teaspoon of bicarbonate
  • ½ teaspoon of vanilla extract
  • 200 g of chocolate chips (dark, or milk, or both, up to you, I personally prefer dark)

Times:

  • Preparation: 15 mins
  • Cooking: 10 mins
  • Rest: none

1- Preheat the oven at 180 Celcius degrees.

2- In a large bowl, mix the flour, salt and bicarbonate. In another bowl beat the butter, the sugars and the vanilla until pale and creamy. Add the eggs and mix again until well combined.

3- Add this mixture little by little to the flour while stirring gently with a spoon. Add the chocolate chips and stir well again.

4- Grease a baking tray, or cover it with baking paper (I prefer that option, less messy) then roll tablespoons of the dough into balls and place onto the trail. Make sure you keep some space between them, as they will swell during cooking). Place the train into the oven for 10 to 11 minutes (but keep an eye on them from 8 minutes as each oven is different and you don’t want to burn those delicious cookies). They should have a golden colour at the end of the cooking time.

5- Let them cool down before removing them gently from the trail, this will allow them to harden a little bit and will prevent you from breaking them.
