I have this recipe since 2002 or 2003 maybe, one of the first I have ever made and one of my favourite too! Inspired by the French chef Joel Robuchon, it is so simple to make and yet, so delicious!

Ingredients for 2 portions:

  • 300 of cucumber
  • 50 g of cream cheese
  • 1 tablespoon of milk
  • 1 teaspoon of lemon juice
  • 2 slices of smoked salmon
  • Salt, pepper
  • 1 teaspoon of fresh chopped mint (or dry mint)

Times:

  • Preparation: 15 mins
  • Cooking: none
  • Rest: none

1- Wash the cucumber and peel it. Grate it in large strips until you reach the seeds, and then cut them in « julienne » (each strip into thinner strips). Put them into a drainer with rock salt for 30 to 60 minutes to drain the excess of water of the cucumber.

2- Mix the cream cheese with the milk, the lemon juice, the mint, salt and pepper, and set aside in the fridge (the mixture shouldn’t be liquid, but more like soft mashed potatoes).

3- Squeeze out with your hands the excess of water in the spaghettis cucumber, then add them to the cheese and stir gently to incorporate them evenly.

4- Spread the spaghettis into 2 small plates and roll a slice of smoked salmon around them.
