One of the first « posh » recipe (or at least at that time that was my level of « poshiness ») I have made since I moved to the UK. It is one of my favourite as it always has this « wow » effect on people, and it is so simple to make.
Ingredients for 4 people:
- 2 large red peppers
- 300 g of smoked salmon
- 2 carrots
- 2 egg yolks
- 1 onion
- 1 pinch of salt
- 1 teaspoon of cumin
- 1 to 2 tablespoon of chopped coriander (I sometimes use dry coriander when I don’t have fresh one at home)

1- Wash and peel the carrots and cut them into tiny bits, chop the onion finely. Put the vegetables into a hot pan with a teaspoon of olive oil and let them cook under high heat for 3 to 4 minutes. Add a little bit of water (half a glass roughly) and let it cook on medium heat until the water evaporates while stirring from time to time.
2- In the mean time chop coarsely the salmon, add it to the pan once the water is evaporated and let cook for a few minutes while stirring regularly. At the end, add the salt, cumin and coriander and give it a good swirl and put aside to let cook down a little bit. Once it is cool, add the egg yolk and stir with a spoon until well combined.
3- Preheat the oven on 200 Celcius degrees. Cut the peppers in half, get rid of the seeds and brush them with oil. Stuff them with the salmon mixture, put them into a baking dish and put into the oven for 10 to 15 minutes (depending on how strong is your oven and how burnt you like the pepper). You can leave them for 5 more minutes in the grill position of your oven at the end.
4- I like to have this dish with a green salad, and a yogurt base dressing (I usually mix yogurt with mint, salt, pepper, and a bit of milk to softened the mixture), but you can of course be creative and have it your way! J
