I am trying to use more the celery in my cooking just because it has a lot of benefices for our health. If I am really honest with you, this soup even if it is very good, is not one of my favourites. But yet I chose to share the recipe with you as we don’t all have the same taste, and I am sure some readers might actually love it!
Ingredients for 3 portions:
- 1 celery
- 250 ml of milk
- 300 ml of water
- 10 cl of crème fraîche
- 2 tablespoons of chopped parsley
- Salt, pepper
Times:
- Preparation: 20 mins
- Cooking: 12 mins
- Rest: none
1- Wash the celery leaves. Carefully bend the part right under the leaves from the curved inside to the straight outside. The strings connect the two parts, so gently pull the leaves down the stalk and the strings will come with them. Wash the leaves and cut them into 2 to 3 cm pieces.
2- Boil the water in a deep pan and add the celery, salt, pepper and leave covered over medium heat for about 12 minutes. Stir from time to time.
3- Remove from heat, add the milk and the crème fraiche, and mix well with a hand mixer (or a blender). Pour evenly into 3 individual bowls (if needed reheat the soup a little bit to serve them warm) and decorate with some parsley.
