There are so many options when it comes to cheesecake: with or without eggs, baked or not. After trying out different recipes, I came up with that one, which is definitely my favourite ever! It is really to die for and there’s not one person who tried it who didn’t love it. Give it a try to see by your self! 🙂
Ingredients for 6 to 8 portions:
The base:
- 175 g of digestive biscuits, or speculos (I do half digestives, half speculos)
- 60 g of soft butter
The filling:
- 250 g of Philadelphia
- 200 g of mascarpone
- 2 eggs
- 150 g of white chocolate
- 50 g of sugar
- The juice of half a lemon
- 1 teaspoon of vanilla extract
The strawberry coulis:
- 250 g of strawberries
- 1 tablespoon of lemon juice
- 20 g of sugar
Times:
- Preparation: 20 mins
- Cooking: 50 mins
- Rest: 12 h
The base:
1- Preheat the oven at 180 Celsius degrees.
2- Mix the digestives (and/or the speculos) with the soft butter until it has a biscuit crumb-like texture and press it into a 20 cm diameter greased cake tin (no need to grease if you are using a silicone mould), spreading the mixture evenly and bake for 5 minutes in the oven.
3- When it is done, remove from oven and set aside to let it cool down.
The filling:
4- Soften and mix the two cheeses together with a large spoon. Add the sugar, the lemon juice and the vanilla extract and mix well.
5- Preheat the oven at 160 Celsius degrees.
6- Melt the chocolate in the microwave, stir until completely melted and even. Pour over the cheese mixture and mix.
7- Add the eggs and beat again until the batter is smooth and creamy. Pour over the biscuit, and put into the oven in a bain-marie for 50 minutes.
8- When the time is up, remove from the oven and let it cool down for 30 minutes at least, then put it in the fridge for 12 hours before taking out of the tin.
The strawberry coulis:
9- Wash and cut the strawberries, and mix them in the food processor with sugar and lemon juice. Keep in the fridge (you can use other fruits for the coulis, such as passion fruits).

Au chocolat blanc quelle belle idée! Je n’en avais jamais fait. Mes amies ont adoré!
Encore un partage bien agréable et le coulis de fraises apporte une petite touche qui est parfait avec le cheesecake . Tu as raison mille et une façon de faire un cheesecake mais celle-ci est une de celle que j’apprécie.
