Even though the mascarpone is one of the most calories loaded cheese I know (with 410 cal per 100 g), it has become one of my favourites and I am always looking for different ways to incorporate it in new recipes. And this one is definitely one of the best ways I have found so far! 😛

Ingredients for 6 portions:

  • 3 apples (Golden)
  • 15 g of butter
  • 2 tablespoons of brown sugar
  • 75 g of sugar
  • 250 g of mascarpone
  • 3 eggs
  • 120 g of flour
  • ½ pack of baking powder (1 teaspoon roughly)
  • 1 tablespoon of lemon juice
  • 2 tablespoons of rum (optional)

Times:

  • Preparation: 30 mins
  • Cooking: 50 mins
  • Rest: none

1- Peel and cut the apples in small bits and put them into a hot pan with the butter and the brown sugar until they are soft and caramelised (5 to 10 minutes) then turn off the heat and set aside.

2- Preheat the oven at 170 Celcius degrees.

3- Beat the mascarpone with the sugar until creamy. Add the eggs one by one, as well as the lemon juice.

4- Mix the baking powder with the flour and add them to the dough. Once the apples are cooled down add them to the mixture with the rum and stir well. Pour the dough into a greased squared baking pan and put into the oven for 50 to 60 minutes. At the end let the cake cool down before taking it out of the pan. Enjoy it cold or at room temperature, and it is even better with scoop of vanilla ice cream.
