March is cold, very cold. It ‘s raining, sometimes even snowing, it is dark, let’s just say I don’t cope well with winter. All I can think about is the warmth of a sunny island, Maldives? Mauritius? … or not. At least not for now, but I can always comfort myself with some good food which flavours will reminds me of those sunny missed places. That will fit more my budget than a trip to the islands 😛
Ingredients for 4 portions:
- 500 g of chicken breast
- 1 large mango
- 2 thins leeks
- 10 cl of coconut milk
- 7 cl of warm water
- 1 chicken stock
- 2 teaspoons of curry powder
- 1 teaspoon of flour
- 1 tablespoon of oil
- Salt
Times:
- Preparation: 30 mins
- Cooking: none
- Rest: none
1- Slice the leeks evenly and wash the leeks. Boil some water, and cook the leek for 5 minutes, then drain them and leave aside.
2- Peel and cut the mango into small bits. Cut the chicken breasts into cubes and cook it over medium heat in a deep pan with the oil. Leave a few minutes, then add the curry powder, the salt and leave again for a couple of minutes.
3- Warm up the 7 cl of water, crumble the chicken stock in it and stir well. Add it to the chicken with the leeks and the coconut milk, and leave over medium heat for 5 minutes.
4- Add the mango dices, and cook again for 2 minutes.
5- Serve this dish warm, with rice.

et bien ma petite entreprise commence doucement mais surement. j’ai 5 clients ( rdv) ; j’en ai déjà vu 2 avec suivi et j’ai un rdv ce soir en terminant mon boulot . un autre est prévu samedi
aujourd’hui j’ai fait dans le simple en recette : gratin oeufs durs et pdt.. .idéal pour les enfants qui adorent ; bien bourratif pour l’hiver qui traine!
