I had my family over for a few days some times ago, and as usual in that case, there is a lot of time in the kitchen involved (which I love!). I wanted to treat my mum with this lemon cake, as I know she absolutely loves lemon! But she ended up feeling so-so about it, having just a little slice, whereas the men of the house loved the cake… and the 2 others I made after they finish this one! 😛
Ingredients for 8 portions:
- 300 g of flour
- 300 g of sugar (200+100)
- 275 g of soft butter
- 5 eggs
- 3 lemons
Times:
- Preparation: 20 mins
- Cooking: 50 mins
- Rest: none
1- Preheat the oven at 180 Celsius degrees. Beat 200 grams of sugar (keep 100 grams on the side) with the butter until smooth and creamy. Add the zest of the 3 lemons, half a lemon juice and mix well (I use an electric whisk). Separate the egg whites from the yolks.
2- Add the yolks one by one to the batter and mix well in between. Add the flour in 2 or 3 times and stir to incorporate it.
3- Beat the egg whites until foamy and firm, and right before they become completely foamy, add the last 100 grams of sugar and beat again.
4- Use a large spoon to incorporate the whites little by little to the batter while stirring gently.
5- Pour the batter into a greased and floured rectangular cake tin and put into the oven for 50 to 60 minutes. Let it cool down before taking the cake out of the tin. Enjoy this cake at room temperature, or cold.
