My encounter with the cauliflower happened on my grandmother’s table last summer. « Try them, it’s really good with the cocktail sauce » she told me… and as much as I love her, no thank you. Just the brainy look of this vegetable was enough to put me off for the past 30ish years, and that wasn’t about to change now.

But how can I resist when she holds the plate right in front of me, with so much hope in her eyes?! I simply don’t and I reach for a small piece of cauliflower, dip it into the cocktail sauce, a glass of water ready in my other hand. But I didn’t need it: my dear Teta was actually right, once again. It was as she said: very good! That’s it, I’m going to try the cauliflower in my kitchen, my way.

Ingredients for 5 portions:

  • 700 g of cauliflower
  • 1 onion
  • 350 g of tomato sauce (I use the 400 g tins of chopped tomatoes)
  • 15 cl of yogurt
  • 1 teaspoon of mustard
  • 1 garlic clove
  • 1 teaspoon of curry powder
  • 1 teaspoon of flour
  • Salt, pepper
  • 2 tablespoons of soya sauce
  • 1 teaspoon of curcuma (optional)

For the presentation (optional):

  • 50 g of grounded almonds
  • 2 tomatoes
  • 1 tablespoon of fresh coriander chopped

Time:

  • Preparation: 20 mins
  • Cooking: 30 mins
  • Rest: none

1- Cut the cauliflower into small pieces, wash them, and place them into boiling water for 3 minutes.

2- Chop the garlic, the onion, and pan fry them in a large pan with a little bit of olive oil (1 teaspoon is enough) for 2 to 3 minutes.

3- Drain the cauliflowers, add the to the pan and cook them for 5 minutes while stirring regularly.

4- Add the curry, the curcuma, the tomato sauce, the soya sauce, and if needed, a little bit of water (100 to 150 ml max). Stir well, bring to boiling point and cook it for 30 to 35 minutes over low heat.

5- Lower down the heat, add the salt, pepper, mustard, stir again.

6- Add the flour to the yogurt, mix until well combined, and add the mixture to the cauliflowers. Give it a swirl and remove from the heat. You can have this on its own for a light diner, or as a side dish with a white fish for example (which is my favourite option)

 

Example of presentation :

Spread the cauliflowers into a plate, and add on the top the coriander, the grounded almonds, and the tomatoes chopped into slices.

    Tu peux utilise choux-fleurs en entier. Couvrir choux-fleurs avec un mélange de yaourt et curry, mettre au micro-ondes pendant 5-10 minutes et après faire griller au four pendant 5-7 min. Profitez!
