A few years ago, I went to Cancun on a last-minute-completely-unexpected-trip! (which are usual the best ones!). During this trip I had the opportunity to try a lot of typical dishes, from the most known to the most “I-have_never_heard_about_that_thing” ones.

Obviously the guacamole belong to the first category, but still, I felt this recipe had something special, as brought it back from my trip, and I thought I share it with you.

Ingredients for 4 portions:

  • 2 rip avocados
  • 8 cherry tomatoes
  • 1 lemon juice
  • Half an onion
  • Salt, pepper
  • 1 pinch of chili (optional)

Times:

  • Preparation: 10 mins
  • Cooking: none
  • Rest: none

1- Cut the avocados in half, remove the flesh and chop it into small dices. Put into a large bowl and pour the lemon juice over to avoid the avocado turning black.

2- Wash and cut the tomatoes into quarters, chop finely the onion, and add them to the avocado with the tomatoes.

3- Add salt, pepper, and chilli and stir until everything is well mixed. Get your best nachos ready (I love the Doritos as far as I am concerned!), and dig in!
