What I liked in this recipe is that there’s no egg in it, and the biscuits have a fun zebra effect. They are quite quick and easy to make, that if you don’t take into account the resting time in the fridge before baking them!
Ingredients for 24 biscuits:
- 250 g of flour
- 175 g of soft butter
- 100 g of sugar
- 1 pack of vanilla sugar
- 1 tablespoon of cocoa powder
- 1 pinch of salt
- 2 tablespoon of sugar (to decorate)
- Preparation: 20 mins
- Cooking: 15 mins
- Rest: 2 h
1- Mix the butter, the sugars, and the salt until smooth and creamy. Add the flour and mix with a spoon.
2- Add the cocoa powder to the batter, stir a little bit but not too much, just enough to have a zebra effect.
3- Divide the dough in 2, roll them into flanges of 4 cm diameter and place in the fridge in a cling film for 2 hours.
4- Preheat the oven at 180 Celsius degrees. Pour the 2 tablespoons of sugar in a large plate, and roll back and forth the dough in it to cover them evenly. Cut slices of 1 to 2 cm thickness and put them on a oven tray covered by baking paper. Then put in the oven for 15 to 16 minutes.
5- When they are ready, let them cool down on a wire rack before enjoying those little diamonds.
